2-4 bell peppers (mix green, red, yellow), diced
2 medium yellow onions, diced
2 stalks celery, diced
2 cups frozen okra, browned
5 quarts chicken stock
2 tablespoons Cajun Seasoning
1 teaspoon ground black pepper
1 teaspoon crushed red pepper
1 teaspoon chili powder
1 teaspoon thyme
1 tablespoon minced garlic
2 bay leaves
2 tablespoons kosher salt
and
1 pound andouille sausage, sliced 1/2-inch thick
1 whole 4-pound chicken, roasted and deboned, cut into 2-inch pieces
Or
1-2 pounds crab meant
1 large can oysters
